Salmon parfait, salmon ‘bacon’, tarragon, 60˚C egg yolk, dill, nasturtium

Beef fillet

Smoked and caramelised onion, toffee onion jus, charred broccoli

Asian braised greens

Charred sweet potato, shitake, black pepper, sesame, tosazu, leek
