1 Hour sous vide egg yolks, gruyere brioche, caviar

 

Mussels in coconut broth

Steamed saldanha bay mussels, coconut, gochujang, chilli, ginger

                             

 

2nd Course

Abalobi line fish

Salted and poached, charred baby gem, fennel, crispy dumpling, fior de lait

 

Lamb rump

Edamame, pickled celeriac, parsley puree, kale

 

Potato ‘Salad’

Raclette ‘dressing’, garlic crisps, turnip, black truffle

                             

Palate cleanser

 

3rd Course

Strawberries and cream

Fresh and macerated strawberries, buttermilk crisp, milk foam, tonka bean caramel, rhubarb, cucumber
